Okay, so I don't actually know how to make pizza. I mean, I make a pretty decent
pizza, but I mostly make mistakes. Hopefully one day i will have made all the
mistakes I can, and then I will know how to make pizza. You might save yourself
some time and learn from my mistakes.

Basics:
Have a pizza stone
Have a peel
Have an oven that gets hotter than the depths of Hell.

[recipe]

Where it says to add a little water, you probably want to do so.
Please do read my article on raising bread dough, I wrote it based on my pizza
experiences.
If you have a kitchenaid, use it, it does a much better job than I do.

Here's the prroximate timing:
Mix together the dough stuff
Stick it in the oven (you did read my dough raising article, right?) for 30
minutes
While it's in the oven, prepare your toppings
Take it out of the oven, leave it covered. Put it in the next best place until
it's fully risen. Leave the wet towel on. Preheat the oven to as high as it
will go (not broil).
Continue preparing your toppings.
Divide the dough in half. Put one ball of dough in the freezer.
Form the other lump of dough into a fat disk. Have the bit that was the middle
of the ball on the bottom, the bit that was the outside of the ball on the top.
It's important not to fold the dough, it'll never come out right if you do.
Let it rest for 5-10 minutes. (Do I have to do this?)
You had better have your toppings prepped by now.
Put a reasonable amount of flour on the peel. Do not be stingy. I've heard not
to use cornmeal, but Two Boots does, and their pizza is great.
Form the pizza dougn. I'm no help here. Try to keep it even.
now, TIME IS OF THE ESSENCE! You do NOT want your dough to stick to the peel.
You mist work fast.
Fold the dough in quarters, put it on the peel, and unfold it.
Put the toppings on. Oil first, then garlic and oily ingrediants like artichokes
or olives, then dried spices, then wet stuff like tomatoes and spinach, then
fresh herbs and cheese.
Press the toppings wown gently. You want to seat them a little, so they don't
roll off when you pop the pizza into the oven.
Quickly pop it onto the pizza stone. This is hard. Yeah, I know. Sorry. Now shut
that oven door quick as you can! Don't let the heat get out!
Cook for like 6 minutes or so. Try not to peek.
Scoop the pizza off the stone. If you let your over properly preheat, this
should actually be easy.
